MARSHALL – The wait is over. Four Seas Asian Restaurant is opening July 21 in its new home in Marshall.

The Four Seas sign has been tantalizing customers on East College Drive for months now. Owners Heidi Gonzalez-Quevedo and her husband, Shufa Li, have slowly but surely been renovating the building that formerly housed Pizza Hut. Along with renovations, the two had to procure wine and beer licenses and get the OK from the city of Marshall to open – which they just received July 10.

“Everything is brand new,” said Gonzalez-Quevedo. The seating area was gutted and the carpeting was replaced with new flooring. The kitchen was gutted as well.

“We have all stainless steel so it’s easy to clean,” she said.

The restaurant is the fifth Four Seas in Minnesota and the family has two more in Missouri and Montana.

The couple moved to Marshall from Sauk Centre. Gonzalez-Quevedo “has lots of relatives in Minnesota,” she said.

Gonzalez-Quevedo, who is Chinese and was born in northeast China before being adopted, and Li, who was born in southeast China, know that their restaurant has been eagerly anticipated.

The restaurant’s Facebook page has many followers who have been asking when is it going to open.

“It’s nice to add a different type of food to a city,” Gonzalez-Quevedo said.

Four seas offers dine-in, take-out and limited catering, which means the food would have to be picked up – there would be no servers.

The restaurant is closed Mondays, but “we’re willing to do parties on Mondays,” she said. “Just reserve the space – call ahead.”

The restaurant will offer lunch specials until 3:30 p.m. Tuesday through Saturday, and all of the entrees come with soup and rice. Customers may order Kung Pao chicken with peanuts, Szechuan shrimp, pad thai beef, Nabeyaki udon soup, moo goo gai pan and fried ice cream to name just some of the many offerings.

A sushi bar will offer many delicacies including eel avocado roll, California roll and sweet potato roll.

Gonzalez-Quevedo is hoping to offer imported Japanese beer including Sapporo and Kirin. And yes, there will be sake, which is a Japanese rice wine. In addition, “we’ll have Bud and Miller, too,” she said. “And basic red and white wines to go with the meal.”

“The sushi chef is from Hong Kong and has 15 years of experience,” she said. “We have an experienced staff in general.”

Gonzalez-Quevedo will hire additional staff after the opening, when she will have more time to properly train new employees.

“”I’ll train people in gradually,” she said. “I don’t want new employees working at the restaurant right away.”

The name Four Seas alludes to a Chinese saying about the four seas of the world – where you are traveling, but are always looking for home. It is loosely translated in English to “home is where the heart is,” Gonzalez-Quevedo said.

Some people will find a familiarity with this kind of food, she said, while others can experience a different culture.
