| | Soul food for thoughtFebruary 24, 2011 - Karin EltonJust got back from attending the Soul Food Festival at the college. The Black Student Union members did a good job of cooking. I usually forgo the meats and load up on catfish, but they didn’t offer it this year. But the ribs, chicken, collard greens, corn bread and sweet potato pie were excellent except for the greens were too generously salted. The first bite was startling because of the salt. But I ate it anyway. I liked the corn bread and sweet potato pie the best. So did my daughter. We’re going to try to make the pie at home. I’ve made corn bread before, but it wasn’t as good. A professor sat by us — my daughter and I and two Independent staffers. He said the best food in town was the Green Bistro — which is run by the Culilnology department on campus. He said they even make their own marshmallows! We were trying to think how you do that? Marshmallows are a unique “food” — puffy and square shaped. Might be worthy of some investigative reporting.
