Brau Bros. brewing up something special for group of 5 Famous Dave’s restaurants

MARSHALL — Brau Brothers Brewing Co. welcomed special visitors last week as the company starts on a partnership with a group of five Famous Dave’s restaurants in the region. Together, Brau Brothers and restaurants, including the Famous Dave’s in Waite Park, will be working on an exclusive brew.

“It’s going to be unique, and it’s going to be a lot of fun,” said Dustin Brau of Brau Brothers.

Brau Brothers is working together with the DTSG franchise group, which includes Famous Dave’s restaurants in Waite Park; Sioux City, Iowa; Sioux Falls, S.D.; Bismark, N.D.; and Fargo, N.D.

Barbecue and beer — “It’s a natural pairing,” said Matt Dooyema, head bartender at Famous Dave’s in Waite Park. That was one reason Dooyema said it will be exciting to work with Brau Brothers. The Waite Park restaurant, located in the St. Cloud area, has hosted “Tap Takeover” events spotlighting Minnesota craft breweries.

Dooyema said Brau Brothers will be featured at a Tap Takeover on Dec. 29. The event will include six different Brau Brothers beers, as well as food inspired by the flavors of Brau Brothers brews, he said.

In addition, Dooyema said Brau Brothers will be brewing an exclusive beer that will be available at the five Famous Dave’s locations in the DTSG franchise.

“We’re going to send them some barley to be smoked,” Brau said. That will help give the brew a unique flavor.

Brau said partnering with the Famous Dave’s franchise will be an opportunity to develop new ideas, and turn them into new beers.
